Homemade Granola

1st mixture:
4 cups rolled oats
¼ cup oat flour (whizz rolled outs in processor/grinder) or can use plain wheat flour instead
¼ cup oil
1 tsp vanilla extract
½ tsp salt
1/3 cup raw honey
 
For later addition:
½ cup seeds (chia, pumpkin, sunflower seeds, hemp)
½ cup or more of nuts (a mix of almonds, walnuts, pecans, brazil nuts, cashew) chopped
1/2 cup raisins or chopped dried fruit (or more if you prefer)
Optional: handful of dark choc chips
 
  1. Set oven to 180 degrees Celcius.
  2. Mix the dry ingredients from the first mixture.
  3. Mix in liquids from first mixture. Can use your hand to mix so that it is more even.
  4. Spread in a large tray over baking paper for 20-25 minutes or til golden brown. Set the timer at 10-15 mins to turn the granola to bake more evenly.
  5. Remove from oven. If you like your granola slightly chunky, let the granola cool down on the tray undisturbed.
  6. Sprinkle generously the mix of sees, nuts and dried fruit over baked granola.
  7. Transfer into an airtight container. Enjoy with milk, yoghurt, over ice cream, baked fruit, or even on its own.  Keeps for 2 weeks depending on weather.
